Pizza Pocket Popsicles - Recipe of the Week #21


Ciao my dear friends!

It’s back to school time already and summer is almost over. My grandkids started back today but, thankfully, we had one last hurrah over the weekend.


My daughter Bridget and her husband had to attend a wedding out of state so they asked if I could stay with the kids. My answer was, “Are you kidding? I would gladly take them indefinitely!” Lol



My grandkids, Lexi and Andrew, love cooking and baking. We decided to make two baking videos together. We planned what we were going to make and even made a list.


The consensus was to make “kid friendly” recipes. We chose to make “Turtles” (sweet) and “PPPs - Pizza Pocket Popsicles”(savory).


So, on Friday afternoon, I packed my bags, my filming equipment, my ingredients and off I went.


The kids were waiting for me behind their windows and, the minute I parked, they came out to hug and kiss me. Is there anything more precious in this world?!? Nope!


Our weekend was spent playing, laughing, cooking, baking, filming, editing, and eating, of course. The kids wanted to do a slumber party so we all slept in the same big room. Andrew, who’s the youngest, would fall asleep holding my hand. Is there a “melt” emoji that I can use here? :)


Lexi, who’s a mini me in many ways, was my right hand person. She is 10 going on 30! She wanted to learn everything I was making and asked lots of question (like I used to do with my nonne when I was her age in Italy). She is also very sweet and affectionate like Andrew.


We made three videos in total. The first two were of the above mentioned recipes. The third was Lexi’s signature dish that she developed herself: green bean bundles. I let her do that video alone and she did a great job!!


I will share all three videos very soon on my website and social media so stay tuned.


All and all, we had an amazing weekend! In honor of my wonderful grandkids, I will share the Pizza Pocket Popsicles recipe. I hope that you too can have a fun time making it with your kids, grandkids, nieces/nephews, or with any kid in your life.

PIZZA POCKET POPSICLES

AKA PPPs


 

Ingredients:

  • 1 lb pizza dough (store bought or homemade), at room temperature

  • 2 tbsps tomato paste

  • 10 slices honey ham

  • 5 slices mozzarella cheese

  • 5 popsicle sticks

  • Flour for dusting and rolling

Directions:

Preheat oven to 375.

  1. Line a cookie sheet with parchment paper.

  2. Dust a clean counter with flour.

  3. Place room temperature dough on the counter.

  4. Using a floured rolling pin, roll dough into as large a rectangle as you can without making holes in the dough (approximately 12”x16”).

  5. Cut 10 smaller rectangles (3.5”x5”) from the dough.

  6. Line up 5 of the small rectangles side by side.

  7. Place a little tomato paste on each and spread it over entire surface.

  8. Add 2 slices of ham and 1 slice of cheese (folded) over each rectangle.

  9. Add a popsicle stick, starting in the middle of the filling, so that half of the stick is inside the pocket.

  10. Brush edges with a little water.

  11. Top with remaining 5 dough rectangles, making sure edges meet.

  12. Press along the edges to seal.

  13. Pinch edges with the tines of a fork.

  14. Place each pocket on the lined cookie sheet.

  15. Bake at 375 for about 20 minutes or until lightly golden.

  16. Remove from oven and serve warm (not hot!).

Tips:

Make sure dough is at room temperature for easier handling.

You may use sauce instead of tomato paste but make sure it’s pretty solid, not liquidy.

You may use any filling of your choice.

Allow pockets to cool a bit before serving because filling will be hot.
